Amber's Favorite Coffee Cake

  • 2 cups all-purpose flour
  • 3/4 cup white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 egg
  • 3/4 cup milk, or as needed
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup all-purpose flour
  • 2/3 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter

  1. Preheat oven to 350 degrees F (175 degrees C). Grease (cooking spray) springform pan. Make the streusel topping: In a medium bowl, combine 1/4 cup flour, 2/3 cup sugar and 1 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Set aside.
  2. In a large bowl, combine 2 cups flour, 3/4 cup sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Crack an egg into a measuring cup and then fill add milk to make 1 cup. Stir in vanilla. Pour into crumb mixture and mix just until moistened. Spread into prepared pan.
  3. Bake in the preheated oven for 20, or until a toothpick inserted into the center of the cake comes out clean. Sprinkle top with streusel. Bake for another 10min.

Mom's Peanut Butter Cookies

1C shortening
1C sugar
1C brown sugar
2 eggs
1t vanilla
1C peanut butter
3C flour
2t baking soda
1/2t salt

cream shortening, sugar (both), eggs, and vanilla.
stir in peanut butter, add flour, soda, and salt.

drop by tsp fulls on ungreased cookie sheet

press with back of sugared fork (white) in criss-cross pattern

bake 350 for 10min

Gramma's Holiday Cookies

combine in one bowl:
4 1/2C flour
1/2t baking soda
1/2t salt

combine in different bowl:
1C shortning
1 1/2C sugar
3 eggs
1t almond extract
2t vanilla

mix all together, form into loaf and chill for 2hrs or overnight

roll dough 1/2" thick and cut with cookie cutters

bake 350 for 7-8min

Mom's Caramel Corn

Pop 7quarts of popcorn

THEN:
1C butter
2C brown sugar
1/2C caro syrup
1t salt
--boil for 5min, remove from heat, ad 1/2teaspoon (no more!!)

place popcorn in roasting pan, pour caramel ontop, stir
oven 250 for 40min, stir every 10-15min

Mom's Oatmeal Raisin Cookies

1/2C shortening
1 1/4C sugar
1/2C molasses
2 eggs
1 3/4C flour
1t (of each) salt, soda and cinnamon
2C oatmeal
1 1/2 Raisins

drop teaspoon fulls on lightly greased cookie sheet
bake 375 for 8-10min

Amber's Monkey Bread

FIRST:
2 1/4C warm water
2 packs yeast
1T sugar
1T butter
2C flour
--combine and stir for 5min

NEXT:
add 1T salt
add 1C flour at a time until forms dough
kneed 5min

THEN:
let rise 25min
melt 1cube butter in bowl, 1C sugar and 2T cinnamon in bowl

LAST:
form dough in balls, dip in butter, then in sugar
place in greased 9X11 pan in upto two layers
bake at 425 for 15min

Chocolate Vinegar & Oil Cake

**TASTES SO MUCH BETTER THAN IT SOUNDS**
3C flour
2C sugar
1/2t salt
1/2t baking soda
1/2C cocoa
2T vanilla
4 1/2oz oil
2C cold water

--mix all together
--do NOT grease baking pan
--bake at 350degrees for 35min

Mom's Potato Soup

4C diced potatoes
2C chopped carrots
2C chopped celery
2C chopped onion
--cover with water and simmer 20min, drain

*sauce*
1 1/4C butter
1C flour
1Quart milk or Evaporated milk or half/half or heavy cream
1T salt
1T sugar
1lb of velveta cheese
--melt butter, add flour stirring until lumps are gone
--add milk and stir constantly
--add cheese one at a time until melted
--add sauce to potatoes, cook til blended

Esther's Banana Bread

1/3C shortening
1/2C sugar
2 eggs
1 3/4C flour
1t baking powder
1/2t baking soda
1/2t salt
2-3 mashed ripe banana

-cream shortening and sugar
-add eggs and beat well
-add dry ingredients
-add bananas
-pour into well greased loaf pan
-bake 350degrees for 40-45min

Esther's Peach Cobbler

Put a large can of drained peaches in bottom of 8x8sq pan
add on top of peaches a little butter, sugar and cinnamon.
mix in a bowl
1C sifted flour
1T sugar
1 1/2t baking powder
1/4t salt
cut in 1/4C butter til course, mix in 1/4C milk and 1 slightly beaten egg.
stir just enough to moisten.
drop by spoonful on top of fruit.
bake 400degrees for 20min or til done.

Mom's Rolled Tacos

1lb of hamburger - browned
1 pack of corn tortillas

-brown hamburger season with salt and pepper
-soften corn tortilla in oil (heated) *in and out*
-roll hamburger in tortilla, hold with toothpick
-place in hot oil and fry until crispy.
--garnish with lettuce, guacamole, salsa, etc.

Cheesecake

Prep Time: 30 Minutes
Cook Time: 1 Hour
Ready In: 7 Hours 30 Minutes
Servings: 12
"This cake is easy to make, and it's so delicious. Everyone that's tried it has said it tasted just like the ones in a deli! You'll love it!"
Ingredients:


15 graham crackers, crushed
2 tablespoons butter, melted

4 (8 ounce) packages cream cheese
1 1/2 cups white sugar
3/4 cup milk
4 eggs
1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour
Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.
--notes
you can also use oreos instead of graham crackers. crust -3rows of oreo (cream removed), 4th row for topping. this is my preferred way to make this!
